Charlie Carrington, 23-year-old chef and owner of Melbourne’s hottest new restaurant Atlas Dining, is shaking up the culinary scene. Known for his ever-changing menus that transport diners to a new culinary destination every four months – from Vietnam to Israel, to Korea to Mexico - the young chef is certainly one to watch.
Charlie will be on the ground at Taste of Melbourne in partnership with Electrolux this year, inspiring festival goers in the Electrolux Chefs’ Secrets activation. The dish he will be cooking with guests is his current favourite, Kingfish and Avocado Tostada developed during one of Charlie’s recent trips to Mexico.
Charlie says, “It’s super simple but big on taste and something that people can adapt at home when they want to impress guests. We will be making our own tortillas which is something a bit different and I’ll reveal my secrets to the best-ever avocado tartare.”
