Pork cut of your choice
- Score the skin of the pork roast about every 1cm.
- Pour boiling salty water over the scored skin. This opens up the pores of the skin.
- Pat the skin dry with a paper towel and let it dry out in the fridge uncovered for at least 4 hours (overnight if possible).
- Pre-heat the oven to 220-240C.
- Rub the skin with oil and lots of sea salt.
- Roast in the oven for 20 minutes.
- Turn the oven down to 170C.
- Remove once cooked to your preference.
