Pork cut of your choice
Olive oil
Sea salt

  1. Score the skin of the pork roast about every 1cm.
  2. Pour boiling salty water over the scored skin. This opens up the pores of the skin.
  3. Pat the skin dry with a paper towel and let it dry out in the fridge uncovered for at least 4 hours (overnight if possible).
  4. Pre-heat the oven to 220-240C.
  5. Rub the skin with oil and lots of sea salt.
  6. Roast in the oven for 20 minutes.
  7. Turn the oven down to 170C.
  8. Remove once cooked to your preference.
